Ingredients
- 2 yellow bell peppers
- 1 red onion
- 1 ½ lbs chicken breast
- 8 wooden skewers
- ½ cup buttermilk
- 1 ½ tbsp honey
- 2 tsp minced garlic
- ½ tsp allspice
- ½ tsp paprika
- 4 sprays cooking spray
- 4 ⅓ cups broccoli
- ¼ cup mayonnaise
- 1 ½ tbsp apple cider vinegar
- ½ cup sliced almonds
- ¼ cup golden raisins

Step 1
Trim and de-seed yellow bell pepper; cut into 1-inch pieces. Cut red onion in half; cut half in 1-inch pieces, and finely dice the remaining half. Cut chicken breast into 1-inch cubes. Thread chicken, 1-inch pieces of red onion and yellow bell pepper pieces alternatingly onto skewers.

Step 2
Preheat a grill, grill pan or heavy skillet on high heat. While it's heating, combine 4 tbsp buttermilk, 2 tsp honey, the garlic, allspice and paprika in a small bowl. Brush half the mixture onto the skewers.

Spray the grill with cooking spray and add skewers. Grill 5 minutes, then turn and brush with remaining buttermilk mixture. Cook another 5 minutes, until chicken is no longer pink in the center.

While chicken cooks, cut broccoli into florets. Place in a microwave-safe bowl with a splash of water and microwave on high 1 minute. (Alternatively, prepare the broccoli raw.)

In a medium bowl, whisk together remaining 4 tbsp buttermilk, 2 tsp honey, the mayonnaise, apple cider vinegar and a pinch of salt. Add broccoli, the reserved minced red onion, sliced almonds and golden raisins. Season with pepper to taste.
