Speedy huevos rancheros

  • 1 ½ tbsp chipotle pepper and sauce
  • 3 cups salsa
  • 1 cup canned black beans
  • 8 corn tortillas - 6" sizes
  • 1 tbsp olive oil
  • 4 eggs
  • 1 avocado
  • ½ cup chopped cilantro


  1. Finely chop chipotle and add to a small saucepan with salsa, 4 tsp sauce from chipotle and black beans. Heat over medium heat on stove top until bubbling (or alternatively microwave).

  2. Meanwhile, warm corn tortillas in a dry nonstick skillet. Remove and wrap in foil to keep warm.

  3. To the same pan, add olive oil and fry eggs to desired doneness.

  4. Top corn tortillas with egg, salsa mixture, sliced avocado and cilantro leaves.
