Tomato, orzo and white bean soup

  • 1 ½ yellow onions
  • ⅓ cup olive oil
  • 3 tbsp minced garlic
  • 9 cups canned diced tomato with herbs
  • 12 cups vegetable broth
  • 4 cups orzo
  • 4 ½ cups white beans
  • 6 cups spinach
  • ⅓ cup nutritional yeast


  1. Peel and dice onion.

  2. Heat olive oil in a large pot over medium heat. Add onion and cook 5 minutes, stirring occasionally, until softened. Add garlic and cook 1 minute more.

  3. Add diced tomatoes with their liquid, broth, orzo, drained white beans and a pinch of salt. Bring to a boil, then reduce heat to a simmer. Cover and cook 15 minutes, or until orzo is tender.

  4. Add spinach, cover and cook another 3 minutes. Season with salt and pepper to taste. Stir in nutritional yeast and enjoy!
