Tomato, orzo and white bean soup
- 1 ½ yellow onions
- ⅓ cup olive oil
- 3 tbsp minced garlic
- 9 cups canned diced tomato with herbs
- 12 cups vegetable broth
- 4 cups orzo
- 4 ½ cups white beans
- 6 cups spinach
- ⅓ cup nutritional yeast
Peel and dice onion.
Heat olive oil in a large pot over medium heat. Add onion and cook 5 minutes, stirring occasionally, until softened. Add garlic and cook 1 minute more.
Add diced tomatoes with their liquid, broth, orzo, drained white beans and a pinch of salt. Bring to a boil, then reduce heat to a simmer. Cover and cook 15 minutes, or until orzo is tender.
Add spinach, cover and cook another 3 minutes. Season with salt and pepper to taste. Stir in nutritional yeast and enjoy!
