Ingredients
- ½ yellow onion
- 6 cups cauliflower
- 3 ½ tbsp butter
- 4 cups chicken broth
- ½ tsp nutmeg
- 1 cup cream
- 2 cups shredded cheddar cheese

Step 1
Peel and dice onion. Chop cauliflower into small florets.

Heat butter in a pot over medium heat. Add onion and cauliflower; cook until tender, about 6 minutes. Add chicken broth and nutmeg. Bring to a boil, then reduce heat to a simmer until vegetables are tender, about 15 minutes more.

Step 3
Remove pot from heat; stir in cream. Transfer to a blender (in batches if needed, making sure blender is not too full) and puree until smooth. Return to the pot.
