Turkey burger & guacamole breakfast stacks
- 8 bacon strips
- 1 zucchini
- 1 lb ground turkey
- ¾ tsp dried sage
- 1 cup guacamole
Add bacon to a skillet and place over medium heat. Cook 8 minutes, flipping occasionally, until crispy.
Meanwhile, grate zucchini on the large holes of a box grater. Squeeze out excess water with a paper towel. Combine zucchini in a bowl with ground turkey, dried sage and a pinch of salt. Form into 1 patty per person.
Transfer bacon to a plate lined with paper towels. Place turkey patties in the rendered fat and cook 4 to 5 minutes per side, or until no longer pink in the middle.
Place burgers on plates and top with guacamole. Layer bacon slices on top and enjoy!
