Sugar-free coconut macadamia granola

Ingredients

  • 1 ½ cups coconut flakes
  • ¾ cup pumpkin seeds
  • ¾ cup almonds
  • ⅓ cup macadamia nuts
  • 2 tsp cinnamon
  • 3 tbsp coconut oil
  • 1 ⅔ cups greek yogurt

Steps

  1. Preheat oven to 350 degrees F. In a large bowl, combine coconut flakes, pumpkin seeds, almonds, macadamia nuts, cinnamon and a pinch of salt. Drizzle with melted coconut oil and toss to coat.

  2. Line a baking sheet with parchment. Spread granola mixture on the prepared baking sheet in an even layer. Bake 15 to 20 minutes, stirring every 5 minutes to prevent burning.

  3. Let cool completely and store in an airtight container at room temperature. Enjoy over greek yogurt.
