Seared pork chops with goat cheese, green beans & a roll

  • 1 ½ lbs green beans
  • 1 ½ tbsp butter
  • 1 ¾ tsp thyme
  • 1 lemon
  • ½ cup goat cheese
  • 4 sprays cooking spray
  • 1 ½ lbs pork chops (6 oz, 6 oz, 6 oz, 6 oz portions)
  • ½ cup chicken broth
  • 4 whole grain rolls


  1. Trim ends off green beans.

  2. Combine butter, thyme leaves, 2 tsp lemon zest, goat cheese, salt and pepper in a small bowl until well blended and smooth.

  3. Spray a skillet with cooking spray and place over medium-high heat. Season pork chops with salt and pepper, then add to the pan. Cook 3 minutes per side, or until done to your preference. Transfer to a plate and top with goat cheese butter. Loosely cover with foil and set aside.

  4. Add green beans to the rendered fat in the pan. Cook 1 minute, then add chicken broth. Cook 3 minutes more, until liquid has evaporated. Season with salt, pepper and 4 tsp lemon juice.

  5. Enjoy with a roll.
