Pumpkin cashew pudding cups

  • ½ cup cashews
  • 1 oz dark chocolate
  • ½ cup pumpkin puree
  • ½ tsp pumpkin pie spice
  • 2 tsp coconut oil
  • ¼ cup milk
  • 2 tbsp maple syrup


    To do ahead:

  1. Soak cashews in a bowl of water overnight.

  2. At snack time:

  3. Place all ingredients except dark chocolate into a blender or food processor. Blend until smooth. Pour into individual ramekins or mugs. Transfer to the fridge until set, at least 10 minutes.

  4. Garnish with chopped dark chocolate.
