Arugula, dried cherry, feta and rice salad

Ingredients

  • 1 cup brown rice (dry)
  • ½ cup sliced almonds
  • ½ cup dried cherries
  • 4 cups arugula
  • ½ cup fresh basil
  • ½ cup feta
  • ¼ cup olive oil
  • 1 lemon
  • 1 tsp dijon mustard

Steps

    Can be done ahead:

  1. Prepare the rice according to package instructions.

  2. Combine rice sliced almonds, dried cherries , arugula, basil and feta in a large bowl.

  3. At lunch time:

  4. In a small bowl, whisk together olive oil with 2 tbsp lemon juice, the mustard and a pinch of salt. Pour over salad and toss to coat.
