Season sirloin with garlic powder, plus a generous pinch of salt and pepper. Heat a skillet over medium-high and spray once with cooking spray. When very hot (test by adding a drop of water to the pan; it should evaporate immediately), add sirloin and sear 1 minute, then turn and cook another 1 minute. Transfer to a plate.

Add olive oil to skillet and return to the heat. Add onion and season with a pinch of salt and pepper. Cook 2 minutes, then lower heat to medium. Add spinach and white mushrooms. Cook 3 minutes, until white mushrooms are just softened. Return the sirloin to the pan and stir to combine. Season with salt and pepper to taste.
