Ingredients
- 1 zucchini
- ¾ cup almond butter
- 1 egg
- ¼ cup maple syrup
- 1 tsp vanilla
- ½ tsp baking soda
- 1 ½ tsp cinnamon
- ½ tsp nutmeg
- ⅓ cup chocolate chips

Step 1
Preheat oven to 350 degrees. Grease or line an 8x8 inch baking pan.

Peel zucchini and grate on the large holes of a box grater (to yield a heaping 1 cup). Add to a bowl, along with almond butter, egg, maple syrup and vanilla. Stir to combine.

Add baking soda, cinnamon, nutmeg and a pinch of salt, stirring until just combined. Fold in chocolate chips.
