Ingredients
- 2 bananas
- ¼ cup chia seeds
- 1 ⅓ cups rolled oats
- ¾ tsp cinnamon
- 2 ⅔ cups almond milk
- ½ cup pumpkin seeds
- ¼ cup dried cranberries

The night before:

Step 1
Peel and mash banana in a medium bowl. Stir in chia seeds, rolled oats, cinnamon, almond milk and 1 ⅓ cup water. Mix until well combined. Cover and refrigerate overnight.

At breakfast time:

Step 2
Place bowl in microwave and heat 1 minute on high. Stir, then continue heating at 30 second intervals until oatmeal reaches desired temperature. (Alternatively, heat in a pot on the stove, stirring frequently, about 3 minutes.)

Sprinkle with pumpkin seeds and dried cranberries. Enjoy!
