Curried avocado quinoa bowls

  • 2 avocados
  • 1 tbsp curry powder
  • ¾ lime
  • 2 tbsp olive oil
  • 2 ⅔ cups pre-cooked quinoa
  • 3 ½ tbsp chopped cilantro


  1. Peel and pit avocado. Add to a bowl, along with curry powder, 4 tsp lime juice and a pinch of salt. Mash well with a fork, then drizzle in olive oil and mash to combine.

  2. Enjoy curried avocado over pre-cooked quinoa, garnished with cilantro leaves if desired.
