Ingredients
- 2 avocados
- 1 tbsp curry powder
- ¾ lime
- 2 tbsp olive oil
- 2 ⅔ cups pre-cooked quinoa
- 3 ½ tbsp chopped cilantro
Steps

Peel and pit avocado. Add to a bowl, along with curry powder, 4 tsp lime juice and a pinch of salt. Mash well with a fork, then drizzle in olive oil and mash to combine.

Enjoy curried avocado over pre-cooked quinoa, garnished with cilantro leaves if desired.
