Honey mustard chicken salad with broccoli and apple
- 3 ⅔ cups broccoli
- 2 apples
- 2 lbs rotisserie chicken
- 4 cups spinach
- 2 tsp dijon mustard
- 2 tbsp apple cider vinegar
- 1 tsp honey
- 2 tbsp olive oil
- ¼ cup raisins
Bring a small pot of water to boil. Roughly chop broccoli, then add to pot and cook 2 minutes. Drain and run under cold water, then pat dry with a towel.
Core and thinly slice apple. Slice rotisserie chicken into bite-size pieces. Add to a salad bowl with broccoli and spinach.
In a small bowl whisk together mustard, apple cider vinegar and honey, then add olive oil in a steady stream, whisking to combine. Season with salt and pepper to taste.
Pour dressing over salad, toss to coat everything and top with a handful of raisins.
