Honey mustard chicken salad with broccoli and apple

  • 3 ⅔ cups broccoli
  • 2 apples
  • 2 lbs rotisserie chicken
  • 4 cups spinach
  • 2 tsp dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 tsp honey
  • 2 tbsp olive oil
  • ¼ cup raisins


  1. Bring a small pot of water to boil. Roughly chop broccoli, then add to pot and cook 2 minutes. Drain and run under cold water, then pat dry with a towel.

  2. Core and thinly slice apple. Slice rotisserie chicken into bite-size pieces. Add to a salad bowl with broccoli and spinach.

  3. In a small bowl whisk together mustard, apple cider vinegar and honey, then add olive oil in a steady stream, whisking to combine. Season with salt and pepper to taste.

  4. Pour dressing over salad, toss to coat everything and top with a handful of raisins.
