Ingredients
- 1 shallot
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 4 cups cherry tomatoes
- 2 avocados
- 3 ½ tbsp fresh basil
- 1 ½ lbs precooked chicken pieces

Step 1
Mince shallot. Combine with balsamic and olive oil in a large bowl and let sit 5 minutes.

Meanwhile, halve cherry tomatoes and dice avocado. Roughly chop basil.

Toss all ingredients with chicken in the dressing bowl, until well coated. Season with salt and pepper to taste.

Tip
If you're packing this lunch, pack the dressing separately in a small sealed container. You can also pack your salad in a sealed jar, with the dressing at the bottom. Just shake when you're ready for lunch!
