Chicken salad with tomato, basil, avocado, and shallot

Ingredients

  • 1 shallot
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 ⅓ cups cherry tomatoes
  • 2 avocados
  • 3 ½ tbsp fresh basil
  • 1 lb precooked chicken pieces

Steps

  1. Mince shallot. Combine with balsamic and olive oil in a large bowl and let sit 5 minutes.

  2. Meanwhile, halve cherry tomatoes and dice avocado. Roughly chop basil.

  3. Toss all ingredients with chicken in the dressing bowl, until well coated. Season with salt and pepper to taste.
