Chicken salad with tomato, basil, avocado, and shallot
- 1 shallot
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 ⅓ cups cherry tomatoes
- 2 avocados
- 3 ½ tbsp fresh basil
- 1 lb precooked chicken pieces
Mince shallot. Combine with balsamic and olive oil in a large bowl and let sit 5 minutes.
Meanwhile, halve cherry tomatoes and dice avocado. Roughly chop basil.
Toss all ingredients with chicken in the dressing bowl, until well coated. Season with salt and pepper to taste.
