Cheesy chicken, broccoli and quinoa casserole
- 1 cup dry quinoa
- 3 cups broccoli
- 1 lb grilled chicken breast
- 1 ½ tbsp butter
- 2 tbsp flour
- 1 ⅓ cups milk
- 2 cups shredded cheddar cheese
- ½ cup greek yogurt
Preheat oven to 350 degrees F. Lightly oil a baking dish.
Prepare quinoa according to package instructions. Cut broccoli into florets. In the last 5 minutes of cooking, add broccoli on top and let steam until cooked through, adding more water if needed.
Meanwhile, shred chicken into bite-size pieces.
Melt butter in the skillet over medium heat. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in milk and cook, whisking constantly, until slightly thickened, about 3 minutes.
Stir in quinoa, broccoli, chicken, 6 oz shredded cheddar and greek yogurt. Season with salt and pepper to taste. Spread mixture into the prepared dish and sprinkle with remaining 2 oz shredded cheddar. Place into oven and bake until cheese has melted, about 5 minutes.
Divide onto plates and enjoy!
