Strawberry banana breakfast bars

  • 1 ½ cups walnuts
  • 1 ½ cups coconut flakes
  • 2 bananas
  • 1 tsp vanilla
  • ½ tsp salt
  • ¼ cup strawberry jam


  1. Preheat oven to 350 degrees F. Line a loaf pan with parchment paper.

  2. In a food processor, combine 1 cup walnuts and 1 cup coconut flakes and pulse until finely chopped. Add bananas, vanilla and salt and blend until the mixture is completely combined and fairly smooth.

  3. With a spatula, transfer mixture to the loaf pan and spread evenly. Bake 25 minutes.

  4. Meanwhile, mix together remaining coconut flakes and walnuts. Set aside.

  5. Remove loaf pan from the oven and allow to cool slightly. Spread strawberry jam in an even layer over the top of the bars. Sprinkle walnuts mixture evenly on top.

  6. Bake an additional 5 to 10 minutes, until top is golden brown. Allow to cool completely and cut into bars.

  7. Enjoy immediately, or store in an air-tight container in the refrigerator for future breakfasts.
