Eggplant fries with wasabi mayo
- 2 eggplants
- ¼ cup olive oil
- 2 tsp wasabi powder
- ¼ cup vegan mayo
Preheat oven to 400 degrees F.
Cut eggplant into rounds, then stack the rounds and cut into French fry-like strips. Place strips onto a baking sheet and drizzle with olive oil. Season lightly with salt and pepper.
Bake 20 to 25 minutes, until browned and crispy. Re-season with salt and pepper, and let cool slightly before removing from pan.
While the fries bake, dissolve wasabi powder in 2 tsp water to create a paste. Let stand 1 minute. Mix with vegan mayo and use for dipping.
