Ingredients
- 1 yellow onion
- ½ fennel
- 1 tbsp olive oil
- 1 ¾ tsp garam masala
- ½ cup dried cranberries
- 1 ¼ lbs tofu (extra-firm)
- 3 ½ tbsp fresh cilantro
- ½ cup pistachios

Step 1
Dice onion. Remove tough center core from fennel and dice into 1/2-inch pieces.

Heat olive oil in a skillet over medium-high. Add garam masala and toast 30 seconds, then add onion and fennel. Stir until slightly softened, about 3 minutes.

Stir in dried cranberries and tofu. Stir to break up tofu and mix ingredients well. Cook about 3 minutes more, until tofu is slightly browned.

Remove from heat and stir in cilantro leaves and pistachios. Salt to taste.

Tip
To prep your fennel, cut any fronds off the top, then cut bulb in quarters and remove core. Then slice or chop according to recipe instructions. Check out this video for more details.
