Garam masala tofu scramble

  • 1 yellow onion
  • ½ fennel
  • 1 tbsp olive oil
  • 1 ¾ tsp garam masala
  • ½ cup dried cranberries
  • 1 ¼ lbs tofu (extra-firm)
  • 3 ½ tbsp chopped cilantro
  • ½ cup pistachios


  1. Dice onion. Remove tough center core from fennel and dice into 1/2-inch pieces.

  2. Heat olive oil in a skillet over medium-high. Add garam masala and toast 30 seconds, then add onion and fennel. Stir until slightly softened, about 3 minutes.

  3. Stir in dried cranberries and tofu. Stir to break up tofu and mix ingredients well. Cook about 3 minutes more, until tofu is slightly browned.

  4. Remove from heat and stir in cilantro leaves and pistachios. Salt to taste.
