Chai-spiced pumpkin bread (grain-free)

Ingredients

  • 1 banana
  • 1 cup almond butter
  • ½ cup pumpkin puree
  • 3 tbsp honey
  • 2 eggs
  • 2 chai tea bags
  • 3 tbsp coconut flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 ½ tsp pumpkin pie spice

Steps

  1. Preheat oven to 350 degrees. Grease or line a loaf pan.

  2. In a large bowl, mash banana well. Add almond butter, pumpkin, honey and egg. Stir well to combine.

  3. Cut open the chai tea bag and remove the spices. Stir into the pumpkin mixture, along with coconut flour, baking powder, baking soda, pumpkin pie spice and a pinch of salt.

  4. Pour mixture into the prepared pan. Bake 45 minutes, or until a tester inserted into the center comes out clean. Let cool 10 minutes before enjoying.
