Seeded broccoli salad (low carb)

  • 3 cups broccoli
  • ¼ red onion
  • 4 bacon strips
  • ⅓ cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 4 drops stevia extract
  • ¼ cup sunflower seeds, shelled
  • ¼ cup pumpkin seeds
  • 1 ½ tbsp sesame seeds
  • 1 cup shredded cheddar cheese


  1. Chop broccoli into bite-sized pieces. Finely chop red onion.

  2. Cook bacon until crispy and set aside on a paper towel.

  3. In a bowl, combine mayonnaise, apple cider vinegar, stevia extract (optional) and a pinch of salt and pepper. Stir to combine, then add broccoli, red onion, sunflower seeds, pumpkin seeds, sesame seeds and shredded cheddar. Toss until evenly coated.

  4. Crumble bacon on top to serve.
