Beet, ginger and coconut milk soup with apple
- 4 cups cooked beets
- 2 cups full-fat coconut milk
- 1 ½ tbsp minced garlic
- 2 ½ tbsp minced ginger
- 1 ⅔ limes
- 3 ½ tbsp chopped cilantro
- 4 apples
Combine cooked beets, full-fat coconut milk, garlic, ginger (peeled) and lime juice in a food processor or blender, along with 1 cup water; blend until smooth, adding more water if needed.
Pour into a microwave-safe bowl. Microwave 2 minutes, stirring every minute, until warmed through.
Chop cilantro and sprinkle on top. Serve warm with an apple on the side.
