Beet, ginger and coconut milk soup with apple

Ingredients

  • 4 cups cooked beets
  • 2 cups full-fat coconut milk
  • 1 ½ tbsp minced garlic
  • 2 ½ tbsp minced ginger
  • 1 ⅔ limes
  • 3 ½ tbsp chopped cilantro
  • 4 apples

Steps

  1. Combine cooked beets, full-fat coconut milk, garlic, ginger (peeled) and lime juice in a food processor or blender, along with 1 cup water; blend until smooth, adding more water if needed.

  2. Pour into a microwave-safe bowl. Microwave 2 minutes, stirring every minute, until warmed through.

  3. Chop cilantro and sprinkle on top. Serve warm with an apple on the side.
