Paleo chipotle chicken burrito bowls with guacamole

Ingredients

  • 1 ½ lbs chicken breast, sliced into strips
  • 3 tbsp olive oil
  • 1 ½ tbsp chipotle pepper and sauce
  • 1 ¾ tsp garlic powder
  • 1 tbsp cumin
  • 4 cups lettuce
  • 2 cups salsa
  • ¼ cup guacamole
  • 2 oz grass-fed cheddar
  • ¾ lime

Steps

  1. In a large bowl, combine chicken, olive oil, chipotle, garlic powder and cumin. Toss well to coat.

  2. Set a skillet over medium-high heat. When hot, add chicken and let sit undisturbed for 5 minutes. Flip pieces and cook another 4 minutes, or until no longer pink in the middle.

  3. Add lettuce, salsa and chicken to a large bowl, tossing to combine. Top with guacamole, cheddar and a drizzle of lime.
