Paleo chipotle chicken burrito bowls with guacamole
- 1 ½ lbs chicken breast, sliced into strips
- 3 tbsp olive oil
- 1 ½ tbsp chipotle pepper and sauce
- 1 ¾ tsp garlic powder
- 1 tbsp cumin
- 4 cups lettuce
- 2 cups salsa
- ¼ cup guacamole
- 2 oz grass-fed cheddar
- ¾ lime
In a large bowl, combine chicken, olive oil, chipotle, garlic powder and cumin. Toss well to coat.
Set a skillet over medium-high heat. When hot, add chicken and let sit undisturbed for 5 minutes. Flip pieces and cook another 4 minutes, or until no longer pink in the middle.
Add lettuce, salsa and chicken to a large bowl, tossing to combine. Top with guacamole, cheddar and a drizzle of lime.
