- 1 ½ tbsp minced garlic
- 3 cups canned diced tomato with herbs
- 4 cups vegetable broth
- 1 ⅓ cups orzo
- 2 ⅔ cups white beans
- 4 cups spinach
- ¼ cup nutritional yeast

Step 1
Peel and dice onion.

Heat olive oil in a large pot over medium heat. Add onion and cook 3 to 4 minutes, stirring occasionally, until softened. Add garlic and cook 1 minute more.

Add diced tomato with their liquid, broth, orzo, drained white beans and a pinch of salt. Bring to a boil, then reduce heat to a simmer. Cover and cook 10 minutes, or until orzo is tender.

Stir in spinach, and cook just until wilted, about 1 minute. Season with salt and pepper to taste. Stir in nutritional yeast and enjoy!
