Tomato, orzo and white bean soup

Ingredients

  • ½ yellow onion
  • 2 tbsp olive oil
  • 1 ½ tbsp minced garlic
  • 3 cups canned diced tomato with herbs
  • 4 cups vegetable broth
  • 1 ⅓ cups orzo
  • 2 cups white beans
  • 2 cups spinach
  • 2 tbsp nutritional yeast

Steps

  1. Peel and dice onion.

  2. Heat olive oil in a large pot over medium heat. Add onion and cook 3 to 4 minutes, stirring occasionally, until softened. Add garlic and cook 1 minute more.

  3. Add diced tomatoes with their liquid, broth, orzo, drained white beans and a pinch of salt. Bring to a boil, then reduce heat to a simmer. Cover and cook 10 minutes, or until orzo is tender.

  4. Stir in spinach, and cook just until wilted, about 1 minute. Season with salt and pepper to taste. Stir in nutritional yeast and enjoy!
