Fuel up: ** Coconut curry cashew clusters (serves 2)**
Take this simple, flavorful trail mix on the road or to the gym for some instant energy.

Cashews2½ cup cashews
2 tsp honey
¼ cup shredded coconut
½ tsp curry powder
⅛ tsp salt

  1. Preheat oven to 375 degrees F.
  2. Mix all ingredients in a medium bowl. Spread mixture across a baking sheet (lined with foil or parchment paper).
  3. Transfer to oven and bake until golden brown, 5 to 6 minutes.
  4. Let cool and break into chunks. Enjoy!
