Ingredients
- 2 tomatoes
- ½ red onion
- 3 ½ tbsp fresh basil
- ½ tbsp balsamic vinegar
- 2 tbsp olive oil
- 8 oz fusilli
- 8 oz mozzarella
- 2 cups mixed greens

Step 1
Roughly chop tomato, red onion and basil. Add to a large bowl with balsamic, olive oil and a few healthy pinches of salt and pepper. Stir together. If you have time, let sit at room temperature for an hour to let flavors meld.

Step 2
Cook fusilli in a large pot of salted water according to package instructions, then drain. Meanwhile, dice mozzarella. Add both to the bowl.

Gently fold everything together and add salt and pepper to taste.

Serve with a side of mixed greens, drizzled with extra vinegar and oil.
