Ingredients
- ½ cup pesto
- ¼ cup mayonnaise
- 4 whole grain rolls
- 4 portobello mushrooms
- 1 ½ tbsp olive oil
- 1 cup roasted red peppers
- 4 cups arugula
- 4 oz provolone

Step 1
Stir pesto and mayonnaise in small bowl to blend. Season with salt and pepper to taste.

Prepare a grill, grill pan or heavy skillet over medium-high heat. Cut roll in half lengthwise and grill, cut sides down, until lightly toasted, about 2 minutes. Transfer to plates. Spread grilled sides with pesto mayonnaise.

Brush portobello on both sides with olive oil; sprinkle with salt and pepper. Grill, rounded side up, 4 minutes, then turn and grill 4 minutes more. Place on each roll.

Drain, rinse and pat dry roasted red peppers. Top each burger with a roasted red peppers, then with arugula and provolone. Close sandwich.
