Ingredients
- 1 cup walnuts
- ¾ cup macadamia nuts
- 5 pitted dates
- 2 tbsp coconut oil
- ½ cup strawberries
- ⅓ cup unsweetened shredded coconut

Step 1
Line a small baking sheet with parchment. Set aside.

In a food processor, combine walnuts and macadamia nuts and process until coarsely ground. Add dates and process again until almost smooth. With food processor running, slowly add coconut oil (melted) until completely combined. Transfer mixture to a medium mixing bowl.

Step 3
Hull strawberries and coarsely chop. Gently fold into the nut mixture. Form into small balls (about 16).

Place shredded coconut in a shallow bowl. Gently roll each ball in shredded coconut until evenly coated, then place back on the baking sheet. Repeat with remaining balls.

Place baking sheet in the freezer and chill 5 to 10 minutes, until firm to the touch.

Enjoy 2 balls per serving. Leftovers can be stored in an airtight container in the fridge for up to 1 week.
