Shrimp scampi spinach salad

Ingredients

  • 3 ½ tbsp butter
  • 12 oz shrimp
  • 1 ½ tbsp minced garlic
  • ¼ cup chopped parsley
  • 1 cup cherry tomatoes
  • 8 cups spinach
  • 1 lemon
  • 1 cup shredded parmesan cheese
  • ½ cup sliced almonds

Steps

  1. In a large skillet, heat butter over medium heat. Add shrimp and garlic and cook until shrimp turn pink, 3 to 4 minutes. Remove from heat. Finely chop parsley and sprinkle on top.

  2. Cut cherry tomatoes in half. Combine in a salad bowl with spinach. Top with shrimp.

  3. Squeeze 2 tbsp lemon juice over salad; sprinkle with salt and pepper to taste. Sprinkle with parmesan and sliced almonds. Enjoy!
