Mediterranean artichoke and sun-dried tomato pita pizza
- 2 cups artichoke hearts
- 1 cup sun-dried tomatoes
- 4 pita breads
- 2 cups olive hummus
- ½ cup nutritional yeast
- 2 tbsp olive oil
- 3 ½ tbsp chopped oregano
Preheat oven to 400 degrees F. Drain and coarsely chop artichoke hearts and sun-dried tomatoes.
Slice pita bread lengthwise into two rounds and place on a baking sheet. Spread olive hummus on top of each round, sprinkle with nutritional yeast and then add artichoke hearts and sun-dried tomatoes. Drizzle olive oil over the top.
Bake 6 to 8 minutes, until pita bread is crisp. Season with oregano leaves.
