- 3 eggs
- ¼ cup cream cheese
- ½ tsp vanilla
- ¼ tsp baking powder
- 2 tbsp erythritol
- 1 cup cream
- 1 ½ cups strawberries

Step 1
Preheat oven to 300 degrees F. Line a baking sheet with parchment; grease the parchment with cooking spray. Separate egg whites and yolks into separate bowls.

Using an electric mixer, beat egg whites until light and fluffy.

To the bowl with the egg yolks, add cream cheese, vanilla, baking powder and erythritol. Beat until smooth. Gently fold egg whites into the yolk mixture with a spatula.

Spread mixture on the prepared baking sheet. Bake 25 to 30 minutes, or until cake puffs up and is golden. Let cool.

While cake cooks, add heavy cream to a clean bowl. Beat with the electric mixer until soft peaks form.
