Crustless broccoli-cheddar quiche
- 2 cups broccoli
- 1 tbsp butter
- 6 eggs
- ⅔ cup cream
- 1 tbsp minced garlic
- 1 cup shredded cheddar cheese
Preheat oven to 325 degrees F. Grease a 9-inch pie pan. Finely chop broccoli florets and stalks.
Heat butter in a skillet over medium heat. Add broccoli and sprinkle with salt. Cook 6 minutes, or until just tender. Remove from heat.
While broccoli cooks, whisk together eggs, cream, garlic, salt and pepper in a bowl.
Place broccoli in a single layer in the prepared pan. Sprinkle with ¾ cup of the shredded cheddar and pour egg mixture over the top. Sprinkle with remaining ¼ cup shredded cheddar.
Bake 30 to 40 minutes, or until filling is just set and top is golden. Let cook 15 minutes before enjoying.
