Zucchini crostini with lemon and mint
- 2 zucchinis
- 3 ½ tbsp chopped mint
- 2 tbsp olive oil
- 1 lemon
- 4 slices whole grain bread
Shave lengthwise strips of raw zucchini with a vegetable peeler.
Toss with chopped mint and olive oil . Season with salt, pepper and lemon juice to taste.
Top toasted bread with zucchini and enjoy.
