Zucchini crostini with lemon and mint

  • 2 zucchinis
  • 3 ½ tbsp chopped mint
  • 2 tbsp olive oil
  • 1 lemon
  • 8 slices whole grain bread


  1. Shave lengthwise strips of raw zucchini with a vegetable peeler.

  2. Toss with chopped mint and olive oil. Season with salt, pepper and lemon juice to taste.

  3. Top toasted bread with zucchini and enjoy.
