Ingredients
- 1 cup rolled oats
- 2 tbsp flour
- 1 tsp ground ginger
- ½ tsp vanilla
- ¼ cup coconut oil
- 3 tbsp maple syrup
- ¼ cup milk

Preheat oven to 350 degrees F. Grease or line a baking sheet with parchment.

In a large bowl, combine rolled oats, flour, ground ginger, vanilla and a pinch of salt. Add coconut oil, maple syrup and milk. Stir well into the dry ingredients.

Spoon balls of dough onto the baking sheet (recipe makes about 8). Press down to about 1/8-inch thick circles. Bake 15 minutes, until crispy.
