Savory chickpea salad toasts

Ingredients

  • 2 cups canned chickpeas
  • 2 cups spinach
  • ½ cup kalamata olives
  • 2 tsp minced garlic
  • 1 lemon
  • 1 ½ tbsp chopped mint
  • 2 tbsp olive oil
  • 4 slices whole grain bread

Steps

  1. Drain chickpeas and place in a food processor. Add spinach, olives, garlic, 2 tsp lemon juice and mint. Pulse until just combined, then add olive oil and pulse until blended. Season with salt and pepper.

  2. Toast bread. Enjoy chickpea salad on toast.
