Ingredients
- 2 ⅔ cups canned chickpeas
- 2 cups spinach
- ½ cup kalamata olives
- 2 tsp minced garlic
- 1 lemon
- 1 ½ tbsp fresh mint
- 2 tsp olive oil
- 4 slices whole grain bread

Step 1
Drain chickpeas and place in a food processor. Add spinach, olives, garlic, 2 tsp lemon juice and mint. Pulse until just combined, then add olive oil and pulse until blended. Season with salt and pepper.
