Arugula, dried cherry and quinoa salad

Ingredients

  • 1 ⅓ cups pre-cooked quinoa
  • ¾ cup sliced almonds
  • ½ cup dried cherries
  • 4 cups arugula
  • ½ cup chopped basil
  • ½ cup feta
  • ¼ cup olive oil
  • 1 lemon
  • 1 tsp dijon mustard

Steps

  1. Combine pre-cooked quinoa, sliced almonds, dried cherries , arugula, basil and feta in a large bowl.

  2. In a small bowl, whisk together olive oil with 2 tbsp lemon juice, the mustard and a pinch of salt. Pour over salad and toss to coat.
