Ingredients
- 1 lb green beans
- 2 ½ tbsp olive oil
- 1 ½ tbsp minced garlic
- 1 shallots
- 1 ½ lbs halibut fillet (6 oz, 6 oz, 6 oz, 6 oz portions)
- 3 ½ tbsp butter
- ½ cup white wine
- 1 lemon
- ¼ cup fresh parsley

Step 1
Preheat oven to 425 degrees F. Line a baking sheet with foil.

In a large bowl, combine green beans, 4 tsp olive oil and 2 tsp garlic. Season with salt and pepper to taste. Spread in an even layer on the prepared baking sheet and roast 10 minutes.

Meanwhile, peel and mince shallots. Pat halibut dry with paper towels; sprinkle with salt and pepper.

Melt butter in a skillet over medium heat. Add the remaining 2 tsp garlic and the shallots; cook 2 minutes. Whisk in white wine and 2 tbsp lemon juice. Bring to a simmer and cook 2 minutes, until slightly reduced. Remove from heat and stir in parsley. Transfer sauce to a bowl.

Wipe the skillet clean and place over medium-high heat; add the remaining 4 tsp olive oil. When hot, add halibut and cook 4 minutes per side, or until flaking easily with a fork.
