Vibrant papaya salsa with chips

  • 1 papaya
  • ¼ red onion
  • ½ jalapeno pepper
  • ⅓ cup chopped cilantro
  • 2 tsp minced garlic
  • 1 lime
  • ½ tsp cumin
  • 6 oz multigrain chips


    To do ahead:

  1. Peel and dice papaya into ½-inch pieces. Peel and mince red onion. De-seed and mince jalapeno pepper. Combine in a bowl, along with cilantro, garlic, 2 tbsp lime juice, cumin, salt and pepper.

  2. Stir, cover and refrigerate at least 30 minutes, to allow flavors to marinate.

  3. At snacktime:

  4. Before serving, season to taste, adding more lime juice or salt. Enjoy with chips.
