Avocado and egg breakfast bowl with ground beef or turkey

  • 1 ½ tbsp coconut oil
  • ½ yellow onion
  • 4 cups white mushrooms, pre-sliced
  • 12 oz ground beef
  • 2 tsp smoked paprika
  • 4 eggs
  • 1 avocado


  1. Heat coconut oil in a skillet over medium-high heat. Peel and dice onion; when oil is hot, add to the pan. Cook 3 minutes, then add white mushrooms, salt and pepper. Cook 2 minutes more.

  2. Add ground beef and smoked paprika to the pan; cook, breaking up the meat with a wooden spoon, until beef is browned through. Transfer mixture to a bowl.

  3. In a small bowl, whisk eggs until even in color. Add to the empty skillet over medium heat and cook, stirring regularly, until set but still slightly moist. Stir in beef mixture and remove from heat.

  4. Peel and dice avocado; season with salt and pepper. Stir in to the beef mixture. Divide into bowls and enjoy!
