Sweet potato avocado "toasts"

  • 4 sweet potatoes
  • 2 avocados
  • 1 lemon


  1. Cut sweet potato lengthwise into 1/4-inch thick slabs. Place in a toaster; run through the toast cycle on darkest setting, or until softened.

  2. Meanwhile, peel and thinly slice avocado. Zest 1 tsp lemon zest, then cut lemon into wedges.

  3. Layer avocado slices on sweet potato slabs; sprinkle with salt and lemon zest. Squeeze with lemon wedge before enjoying.
