Chocolate ginger granola bars

  • 1 cup rolled oats
  • 2 tbsp sesame seeds
  • ¼ cup pumpkin seeds
  • 2 tbsp chia seeds
  • ½ cup walnuts
  • ¼ tsp cinnamon
  • ¼ tsp ground ginger
  • ¾ cup chocolate chips
  • 1 tbsp coconut oil
  • 2 tbsp sunflower seed butter


  1. In a dry skillet over medium heat, add rolled oats. Toast 5 minutes, until slightly golden. Transfer to a bowl.

  2. Add sesame seeds and pumpkin seeds to the empty skillet. Toast 5 minutes, then add chia seeds and toast 1 minute more. Add to the same bowl as the oats.

  3. Chop walnuts and add to the bowl, along with cinnamon and ground ginger.

  4. In a saucepan over low heat, combine chocolate chips and coconut oil. Whisk constantly until chocolate is mostly melted, then remove from heat and continue whisking until smooth. Whisk in sunflower seed butter. Add melted chocolate to oat mixture and stir to fully combine.

  5. Line a loaf pan with parchment. Press mixture into the loaf pan in an even layer. Chill 15 minutes, then cut into bars. Store in an airtight container in the fridge until breakfast time.
