Quick pistachio & oat granola
- 1 tbsp coconut oil
- 1 ½ tbsp maple syrup
- 1 ¼ cups pistachios
- ¾ cup rolled oats
- ¼ tsp cinnamon
- ¼ tsp salt
- 1 cup milk
Preheat oven to 350 degrees F. Line a baking sheet with parchment.
Melt coconut oil and add to a bowl with the maple syrup. Add, pistachios, rolled oats, cinnamon and salt, stirring to coat.
Spread granola on the prepared baking sheet in a single even layer. Bake 8 minutes, or until golden. Remove and let cool completely.
Enjoy with milk, or store leftovers in an airtight container at room temperature for future breakfasts.
