Quick pistachio & oat granola

  • 1 tbsp coconut oil
  • 1 ½ tbsp maple syrup
  • 1 ¼ cups pistachios
  • ¾ cup rolled oats
  • ¼ tsp cinnamon
  • ¼ tsp salt
  • 1 cup milk


  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment.

  2. Melt coconut oil and add to a bowl with the maple syrup. Add, pistachios, rolled oats, cinnamon and salt, stirring to coat.

  3. Spread granola on the prepared baking sheet in a single even layer. Bake 8 minutes, or until golden. Remove and let cool completely.

  4. Enjoy with milk, or store leftovers in an airtight container at room temperature for future breakfasts.
