Chocolate walnut banana muffins

  • 1 ½ cups flour
  • ⅓ cup sugar
  • ⅓ cup cocoa powder
  • 2 tsp baking powder
  • 2 bananas
  • 1 egg
  • ⅓ cup canola oil
  • ⅓ cup milk
  • 1 tsp vanilla
  • ¼ cup walnuts


  1. Preheat oven to 350 degrees F. Grease or line a 12-cup muffin tin.

  2. In a medium bowl, combine flour, sugar, cocoa powder, baking powder and a pinch of salt.

  3. In a separate large bowl, mash bananas. Stir in egg, canola oil, milk and vanilla. Stir dry ingredients into the wet ingredients until well blended. Chop walnuts and fold in to the batter.

  4. Divide batter among the 12 muffin cups. Bake 20 minutes, or until a tester inserted into the center of a muffin comes out clean. Let cool 10 minutes before removing. Enjoy 2 muffins per serving.
