- 2 cups cherry tomatoes
- 1 cucumber
- 2 ½ tbsp olive oil
- 2 tbsp red wine vinegar
- 2 tsp dijon mustard
- 2 cups pre-cooked quinoa
- 2 cups canned chickpeas
- 12 oz canned tuna
- ¼ cup feta

Step 1
Cut cherry tomatoes in half. Dice cucumber.

In a bowl, whisk together olive oil, red wine vinegar and mustard. Season with a pinch of salt and pepper.
