Pumpkin spice energy bites

Ingredients

  • 6 pitted dates
  • ¾ cup unsweetened shredded coconut
  • 2 tbsp flax meal
  • 1 tbsp maple syrup
  • 2 tbsp protein powder
  • ½ tsp vanilla
  • 1 tbsp pumpkin pie spice
  • ¾ cup almond butter
  • ½ tbsp coconut oil

Steps

  1. Place all ingredients in a food processor until well combined. (Add a little extra coconut oil if very crumbly.) Place batter in the fridge for 30 minutes.

  2. Form batter into 16 1-inch balls. Enjoy 2 bites per serving, or store in the fridge for future snacking.
