Spiced pumpkin cookies

  • 1 cup flour
  • ⅔ cup rolled oats
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ¼ tsp allspice
  • ½ cup pumpkin puree
  • ⅓ cup canola oil
  • ¾ cup sugar
  • 1 tsp vanilla


  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.

  2. In a medium bowl, combine flour, rolled oats, cinnamon, baking soda, allspice and a pinch of salt. In a large bowl, combine pumpkin, canola oil, sugar and vanilla. Gradually add dry ingredients to the wet ingredients.

  3. Scoop batter in heaping tablespoons onto the prepared baking sheet. Bake 15 to 20 minutes, until golden and slightly firm. Enjoy 1 cookie per serving.
