Caprese stuffed avocadoes

  • 2 avocados
  • 8 oz mozzarella
  • 2 cups cherry tomatoes
  • 3 ½ tbsp fresh basil
  • 2 ½ tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 6 cups mixed greens


  1. Cut avocado in half and remove the pit. Scoop out some of the flesh and set aside.

  2. Dice mozzarella and add to a medium bowl. Halve cherry tomatoes and add to the bowl. Thinly slice basil and add to the bowl. Drizzle with 4 tsp olive oil and season with salt and pepper to taste.

  3. Fill avocado half with caprese salad. Whisk together remaining 8 tsp olive oil with the balsamic. Toss with the mixed greens and reserved avocado flesh. Enjoy together.
