Caprese stuffed avocadoes

  • 1 avocado
  • 4 oz mozzarella
  • 1 cup cherry tomatoes
  • 2 tbsp fresh basil
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 3 cups mixed greens


  1. Cut avocado in half and remove the pit. Scoop out some of the flesh and set aside.

  2. Dice mozzarella and add to a medium bowl. Halve cherry tomatoes and add to the bowl. Thinly slice basil and add to the bowl. Drizzle with 2 tsp olive oil and season with salt and pepper to taste.

  3. Fill avocado half with caprese salad. Whisk together remaining 4 tsp olive oil with the balsamic. Toss with the mixed greens and reserved avocado flesh. Enjoy together.
