Crunchy asian chicken salad with peanuts

Ingredients

  • 1 ¼ lbs rotisserie chicken
  • 2 apples
  • 2 sticks celery
  • 1 cup shredded carrot
  • 6 cups lettuce
  • 2 tbsp peanut butter
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 2 tbsp mayonnaise
  • ¼ cup unsalted peanuts

Steps

  1. Shred rotisserie chicken into bite-sized pieces. Dice apple and celery.

  2. Combine the rotisserie chicken, celery, carrot, apple and lettuce in a bowl and stir to mix.

  3. In a small bowl or cup, whisk together peanut butter, rice vinegar and soy sauce until smooth. Whisk in the mayonnaise. Spoon dressing over the salad and mix well.

  4. Sprinkle with peanuts and enjoy!
