- 2 sticks celery
- 1 cup shredded carrot
- 6 cups lettuce
- 2 tbsp peanut butter
- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 2 tbsp mayonnaise
- ¼ cup unsalted peanuts

Shred rotisserie chicken into bite-sized pieces. Dice apple and celery.

Combine the rotisserie chicken, celery, carrot, apple and lettuce in a bowl and stir to mix.
