"Zucchini bread" oatmeal
- 2 zucchinis
- 3 cups almond milk
- 2 cups rolled oats
- 1 ¾ tsp cinnamon
- ¼ cup maple syrup
- 2 tsp vanilla
- ¼ cup raisins
- ¼ cup walnuts
Grate zucchini on the large holes of a box grater.
In a medium saucepan, bring almond milk and 1 cup water to a boil.
Once liquid has come to a boil, stir in rolled oats and a pinch of salt. Mix to combine.
Add grated zucchini, cinnamon, maple syrup and vanilla. Stir well and cook 5 to 7 minutes, stirring frequently, until oats are creamy and liquid is absorbed.
Divide into bowls and top with raisins and walnuts. Enjoy warm.
