"Zucchini bread" oatmeal

  • 2 zucchinis
  • 3 cups almond milk
  • 2 cups rolled oats
  • 1 ¾ tsp cinnamon
  • ¼ cup maple syrup
  • 2 tsp vanilla
  • ¼ cup raisins
  • ¼ cup walnuts


  1. Grate zucchini on the large holes of a box grater.

  2. In a medium saucepan, bring almond milk and 1 cup water to a boil.

  3. Once liquid has come to a boil, stir in rolled oats and a pinch of salt. Mix to combine.

  4. Add grated zucchini, cinnamon, maple syrup and vanilla. Stir well and cook 5 to 7 minutes, stirring frequently, until oats are creamy and liquid is absorbed.

  5. Divide into bowls and top with raisins and walnuts. Enjoy warm.
