Banana chia overnight oatmeal

  • 4 bananas
  • ¼ cup chia seeds
  • 1 ⅓ cups rolled oats
  • ¾ tsp cinnamon
  • 2 ⅔ cups almond milk
  • 2 tbsp pumpkin seeds
  • ¼ cup dried cranberries


    The night before:

  1. Peel and mash banana in a medium bowl. Stir in chia seeds, rolled oats, cinnamon, almond milk and 1 ⅓ cup water. Mix until well combined. Cover and refrigerate overnight.

  2. At breakfast time:

  3. Place bowl in microwave and heat 1 minute on high. Stir, then continue heating at 30 second intervals until oatmeal reaches desired temperature. (Alternatively, heat in a pot on the stove, stirring frequently, about 3 minutes.)

  4. Sprinkle with pumpkin seeds and dried cranberries. Enjoy!
